Sesame seeds are much more than the little condiments found on our hamburger buns. When toasted they can add the perfect nutty flavor and aroma to any dish and when creamed they can even be used to emulsify! There is a lot you can do with them, and this amazing creamy tahini recipe is a base for a lot of yummy goodness.
Sesame seeds also really good for us. They are packed with micronutrients like copper, calcium, iron, zinc & vitamin B1. They are home to 2 very special lignans: sesamin and sesamolin. These compounds are being research on their abilities to to lower cholesterol, prevent high blood pressure, decrease inflammation.
Lignans are polyphenols found in plants, best known for their anti-oxidative properties. And we know, anti-oxidants are good for the body because they protect our cells from free radicals (cancer causing compounds).

2 c. hulled sesame seeds₁
2-4 Tbsp. oil (olive, avocado, grapeseed, canola)
Salt to taste (optional)
1 cup of sesame seeds= ½ cup of tahini
₁ hulled seeds create a creamier consistency than unhulled seeds.
