Beet & Ricotta Hummus
Prep Time: 30 mins
Cook Time: 1hr 30 mins
Yield: 4 cups
1 c. dried chickpeas, soaked OVERNIGHT
2 tsp. baking soda
1 small beet, roasted and cut
1 ½ large lemons, juiced
4 cloves garlic, grated
1 ½ tsp. Kosher salt
1 c. tahini
¼ c, ricotta
¼ tsp coriander
1 tsp ground cumin
Paprika, for serving
Olive oil, for serving
Fresh parsley for serving, chopped
Baking soda helps to break down the proteins in chickpea. Without the addition of baking soda you will find they take significantly longer to cook.
For extra flavor set aside some of your chickpea water and cool. Use this in replace of the 1/3c. of fresh cold water used to blend the tahini sauce.
